Prime I believe. In the past I've always bought the flat cut at local grocery in 2-3 pound chunks (longer piece,sides parallel) versus point cut ( shorter piece with 1 end square,tapers to a point,has more waste) when choosing either plain brisket for the smoker Spring -Fall or the corned beef for the oven in early March. But from now on will buy the whole brisket long as there's room in freezer.Being a tougher cut its best to cook them low/slow no matter how big they are of course,but I've heard of good results from marinating in fridge overnight then grilling a 2 pound chunk for an hour or so. Gonna see how that works in a few weeks.
I verified the 2.89$ for prime brisket at Costco in Puyallup (Tacoma). I almost bought one to put in the grinder but the brisket had a huge amount of fat slab on it. Would be hard to trim too. I know I'm shooting for 15% but it seems the brisket cut is a fat monster!
My local Costco had flats for about the same price. No packers. But then, they had nothing when I was there Sunday. $2.69 for whole brisket at Walmart down the road.
yeah, they figure if they can take a full packer brisket and cut the flat off it they can then mark it up almost 3x the price. they probably get 3 of those 3lb flats out of a whole packer and grind the point into burger
Got one last week for $2.99, and this one is prime. Cooking it for thanksgiving to go with the little turkey they give me at work. I'm a little nervous. Never 'cued a brisket before. Been doing lots of reading.
I was at Costco today and prime packer briskets were $2.69 per pound. That's the best I've seen here. 20 cents lower than our usual. Might pick one or two up.
