    When cheese curds are super fresh, and not refrigerated yet, they squeak when you bite into them.

    Westby creamery curds are one of the best in the world. But..... I have to say that cedar valley's are just a tad better. It's a fine line between the two, and I'd never turn either down.

    When my kids were little we would fry some Halloumi cheese in a pan. When you take a bite of it, it is squeaky on the teeth so all these years theyve called it squeaky cheese.

    Cooler there than it is here.
    Just put 2 , 4" dia rounds of fkws in the stove and closed it down for the night.
    Thinking about the arctic entry I'm going to build starting this week Lord willing.

    62 in the house this morning with 27 outside. A load of poplar is doing its job warming up the house. Nice sunny day today.

    We get some pretty crazy temperature swings here this time a year. -13c/8f and a good frost. Larch and doug fir reloaded.

    Got up to 32F and significant frost. Beauty red sunrise which is rising far to the south these days. Chucked 4 Red Oak splits in a hour ago. Good to go.
