Most of the party boats go for scup/porgy. We try to go for black sea bass. Anything more, like striped bass or fluke, and the $'s go up.
No, we actually use live sand dabs (small sole or flounder) about as big as your hand or live horse herring. Many folks use lead head jigs with curly tail rubber attachments. They are ok where there are larger populations of lings on the coast. In inner Puget Sound the fish are hammered pretty hard and quickly become PHD lure experts. I'm sure they recognize different brands of lures by name and can quote local retail prices. For us the live bait works best. The cutting board is just a utility board to protect the gel coat table surface. A seasoned fisherman to identify that!

Thanks! We've been to the Cape many times. We prefer either Spankys or Tugboats over Baxters. Too many gulls around Baxters. Both on the water in the same Hyannis marina area. I'm sure we'll grab a bite at one of the many places there.
Know what you mean about the gulls. We have a place called "The Tides Tavern" In Gig Harbor a quaint town near here that has an outside deck for dining and plenty of temp. dock space. We go by boat occasionally during the summer. Dining outside, the gulls are constantly flying overhead. I worry about looking at my plate and suddenly realizing "What the heck, I didn't order Roquefort dressing on my fries!"
Last time we were there they had put up mono-filament lines criss-crossing above the seating area to keep them away. Metalcutter you make a great point ; even miles of line won't keep their homemade sauce off your plate.
