Big Christmas smoke

    Getting prepped for a big smoke on Christmas Eve. I’ve a lot of big smokes but this one is a lil different. Brisket, pork, and turkey. Many different sizes of meat and different targeted finish times. This ones gonna be interesting. 70 lbs of meat total, gonna be and all brighter watching for Santa.     It’s actually multiple feasts. Two family events for us, and 4 briskets and the turkey are for friends

    Me too, great all around smoking wood. And I have plenty of it. I recently sorted through my woodpile and pulled almost a face cord of cherry shorts and uglies out. That’s all going to be used for the smoker

    Sounds good buddy! My brother did a brisket today, and also smoked devil eggs (yeah, I thought the same thing, WTF.....until I tried them) and WOW are they delicious!!

    2:30 am, 23 degrees outside, wind howling, and smokes rolling! First two briskets and the pork butt are on. Stove is cranking inside, nice and toasty in here. Cold beer and hot coffee and I’m trying to keep my eyeballs open. Lol good times.
