I always loved to make bread. My problem is eating too much of it (and anything else I can get my teeth on) I have three, yes three bread machines. In the end, I prefer the oven baked bread. Sometimes I would start the bread in the machine, then take it out and bake it off in the oven. I like to let my bread raise sitting the bowls behind the pellet stove. I get really good results that way. Then I like to make toast with butter and jam on it. Any jam will do. With kids living upstairs, I could make some and give most of it away so I wouldn't eat it all. I liked the looks of that sandwich bread recipe that was posted earlier.
I use a bread maker all the time but only to knead the bread. I use the dough setting. When the cycle is finished, I take it out and form my bread or buns, let them rise and then bake them. I don't like the hole in the bread if you use the baking cycle on the bread maker. I used to use my Oster kitchen mixer but after wrecking one using the dough hooks all the time, I switched to a bread machine. It stands up better. I am going to have to try the no-knead bread and see how it turns out.
