    I tried a Basil-Tomato Grilled Cheese sandwich today for lunch....not bad.

    I've been growing and eating more herbs. They're all supposed to be "good" for you in one way or another. Most basil I find a little bit strong, but eat a little anyway.

    I planted a whole row of basil in my garden this year. I'll need to pick it all soon once it gets a little cooler and dehydrate what we can't use. It's a semi tropical plant, so it really can't handle much below like 45°.

    INGREDIENTS
    1 small loaf French bread (or foccacia or other bread)
    6 tablespoons basil pesto (or substitute olive oil)
    6 large ripe tomatoes, sliced
    salt and pepper, to taste
    1 pound fresh mozzarella, thickly sliced
    fresh basil leaves (about 24)

    I like bruschetta with fresh picked tomatoes from the garden, but sometimes I substitute or add parsley to the basil.
