One of my favs is pumpkin rolls. That is why I tried to make these. I wanted mini versions to store easily and have small portions.

They looked real good. Glad you are having fun baking all those goodies. Hope you have hungry neighbours to share with.

It's my wife's birthday/Christmas party this afternoon. I made the yearly Buche de Noel for her. We cheated by eating the cut off pieces and extra frosting.

Another birch log again this year with marzipan mushrooms. We have a nice minty ice cream to go with it.

As always a great job and it looks good enough to eat. Perfect Firewood hoarders birthday cake. I should have thought of that for Campinspecter. Maybe next year!!!

    Dough
2 1/4 teaspoons active dry yeast
    1/4 cup warm water
    2 tablespoons light brown sugar
1/2 cup (stick) unsalted butter, melted
    1 cup warm eggnog
1/4 cup plain vanilla yogurt (or if you have leftover mashed potatoes lying around use those, they work great!)
    1 egg
    4 cups all-purpose flour
    1/4 teaspoon salt
    1 vanilla bean, scraped (optional)
    1 teaspoon vanilla extract

    Filling
Mix 1/2- 3/4 cup brown sugar with 3 tablespoons cinnamon
1 stick butter (1/2 cup), very, very soft

    Frosting
Mix egg nog with powdered sugar to your desired consistency

Activate yeast in mixing bowl for 10 minutes with warm water and sugar.

Add wet ingredients and mix well.

Add flour 1/2 cup at a time, use stand mixer or hand beater with dough hook, dough will be wet and soft, mix/knead 5 minutes

Oil dough ball, return to bowl, cover and let stand in warm place to double, about an hour.

Roll out dough 1/2 at a time on a floured surface about 9"x 12" and spread 1/2 of softened butter over entire surface, sprinkle 1/2 of filling over dough. Roll from the small end, keep it tight. Cut in 3/4 to 1 inch rolls, you can use dental floss for this. Put the floss under the roll, cross strands at the top and pull to cut. Put in 9 inch round cake pan and top each roll with a little more butter, bake 350 f 25-30 minutes spread frosting over the top.

    Been awhile for this thread.

Did a little pie making yesterday for a fundraiser at the kids school. I saved the three little ramekin ones for me:).
