I've noticed that too. Not every cherry smells like "cherry wood". All the cherry that I cut from my wood lot smells great. However I cut a small cherry up at my house and it smelled as you say, "sour".
I’m getting the gist that some smells here and there depends on location and soils. Not necessarily but this smell debate is kinda interesting because we are talking about the same tree species.’I smell that red oak smell like its one of the most sour cheeses ever. Then I gotta think if red oak could be grown here I’m tempted to test such a theory.
Yep. Terroir. All about the soil. Same principle with grapes and wines. Some soils will make the same species of grape taste different. The soil at my woodlot is a rich woods soil, while at my house 25 minutes away it's a heavy clay type soil.
