    So dirtdevil Dwight, you wrap for the resting, eh?
    I’ve gotten away from wrapping all together, one less step and still great results. In fact I rarely use a cooler anymore… and since I finish the cook in the oven, once it hits probe tender or the usual 203° I just turn the oven off and leave until the brisket (or Boston Butt for that matter) comes down to 165° and then :drool:
