The manual for the AS has the same recommendations as my IS using flue temps as the guide for engaging the cat. Flue probe would be helpful IMHO.
Can you just leave the side panel off for the time being so you can use the cat probe?

A lot of people selling things that they dont have a clue about. Some midget slot cars (nice ones) on Ebay have a price tag of 300 to 500 dollars.
What species of wood do you have, that can make a difference also?
For starting a fire from a cold stove (and your chimney) i would use 3 or 4 inch splits and lincoln log it. Lots of aiir space helps a bunch.
Can you post a picture of how you are building the fire, the one that wants to go out?

If it's what I think it is, is a bolt for the expansion of that plate, it appears to be loose but that's the way it's meant to be .
