Properly filed for the powerhead a .375 "can" out cut .325 because of more room for chip clearance.

Have you changed the plug? Sounds spark/ignition related.
Does the saw go to wot out of wood? Sound like rpms are higher after warmed up?
Needle in carb most likely stuck open. After fixing I would fill oil, spin with plugs out drain and refill.

362 is a two piece muffler.
Make sure the piston does not bind sliding down into the bore. I have two Cross kits here where the bottom of the cylinder is way to tight.
I would look at the Dolmar 5105 if your set on new.
