Same here over 10 years ago. First cook was burgers on the Green Egg and were so over smoked we almost couldnt eat them :rofl: :lol:

Most think 165 deg for pork..... 140-145 and a short rest is perfect, especially for chops
:yes: Thick chops are the best! Low cooking temps keeps em moist especially if they are thinner cuts.
