Yep, that's Cottonwood. If you're happy, then that's what matters. I'm not a big Cottonwood fan myself, but I can't hate on a guy for getting it done.
I tend to manage mine between 300 and 400 degrees, right around 350 is a good temp for what we like. It seems to be a good zone for what I need...

I have seen quite a few people use a small desk fan or a tower fan. Other people like the fan that works off the heat of the stove and sits on top...
No real special method. I just drizzle it on with a can or so. I just try not to pour too much at one time so it doesn't get all over everything....
