Meat and taters. And a new brew. I'm pretty sure it was the best burger I can take credit for, mostly because the beef came from a farmer friend and it makes the best burgers ever. And the local lettuce, tomato, bacon, and bun.
Just eat some tender shoulder steak over the fire pit. Burned down some hard woods to coals then added some green apple wood right before cooking to enhance the smoke. Best smoky flavored steak ever, it's a little tricky getting it cooked just right, but the smoke flavor is worth the effort. Sorry, no pics, I eat it all already!
Got a nice rack of ribs for free this week so it was time to get the cooker fired up. About an hour in at 300 degrees over pecan wood Short on time so going to wrap them in foil. Another hour and a half in the foil. Ready for some homemade sauce Put sauce on a few times for another 30 minutes and ready. We had some awesome local sweet corn, beans out of the garden, roasted banana peppers out of the garden, and potatoes with onions,olive oil, and spices wrapped in foil. Peppers before and after. Still firm but cooked through with olive oil, spices and red pepper flakes.
Prime chuckie has been in da smoke @275°for 3 hours,I now put it in a foil pan with half a can cheap beer cause that's how I roll...its,elevated off the bottom of the pan so it's not braising...it will stay in there for 2 more hours
Mrs. TD did the plant buying this year. She bought sweet banana peppers instead of hot banana peppers... The plants are doing good. They're just not hot...
