That seems a bit high to me. Mine are usually below 600 on probe thermometer. Mine can get to 800 but I usually have to be pushing the stove to get them there with the air above a 1/4 of the way open on a full load.

My guess is the only way you will find out is to try it your self, I had a Summit that ran high flue temps and low stove top temps and I tried a damper but it basicly did nothing, the Drolet I have now works so well I dont feel the need for it,
At 600 stove top my flue temp is right about 300 (surface) which is way lower then my Summit ever ran on the same chimney.
I have a pre EPA stove in my shop and I use the damper all the time.

I think I will record the data for the rest of the season, wood species, indoor/outdoor temps, load size, weather, winds etc install over the summer and record new data next season.

Look forward to seeing your results.

If they are anything like mine, you won't need to keep those records after a few days next burning season.,

So what do you run for flue temps, both before and after? That's amazing you can keep it closed most of the time, you must have one heck of a draft.

400 degree stovetop at the moment, flue 560. Previously, that flue temp would have been about 720.....

    500 - 525 stovetop previously, I was running flue temps around 800. Now, 620 to 650.

    Big difference.

You must have a strong draft, taking into account the difference between my surface temps and your internal without a damper my flue temps are as low as yours (or lower) for the same stove top temps. I only have about 18 feet of chimney so draft is about right for my stove.

My pipe only occasionally gets up to 400 surface temperature (SW pipe) during a reload but I dont allow it to stay there very long. Running 400 surface temperature all the time would not be acceptable to me that would be like 800 internal
I generally run around 325 surface temperature with a 625— 650 stove top.
pipe and chimney only adds up to about 15 feet , straight up , the stove pipe is 6 inch and about four and half feet the chimney is 8 inch, draft has never been a problem.
The only problem I've had with this stove is when the door gasket was screwed up and it wanted to get too hot
