This seems to be an ongoing theme here in the smokehouse so I thought I would help it along. I cooked a 2.5lb leg of lamb today and used a recipe that I got from Well Seasoned. I used a red wine instead of white and soy sauce instead of beef stock since I didnt have any. I cooked mushrooms in the sauce and fried up some polenta too. Anyway it turned out great and weve got enough leftovers for lunches tomorrow. In the pan to get a nice sear all over Out of the oven All plated up and ready to eat

Part of it was out of necessity due to a lack of beef stock and part of it was personal preference we like red wine over white and I wasnt going to buy a bottle of white just for one meal. Thank you for sharing that with me it turned out great. I was a little nervous about using soy sauce but it worked perfectly.
It looked great! Next: appetizers....... jerk chicken pressed between pan fried plantains topped with a mango chutney!
