l smoked this 14 lb brisket last night and over night. It was the first time I had tried the 4-2-10 method. 4 hrs of smoke at 225f, 2 hrs at 175f and then a minimum of 10 hours at 150f, wrapped in butchers paper and then sealed in a pan with a bit of water and wrapped in tin foil. For me it turned out to be more 5-2-11. It turned out very juicy. I tried this new to me rub and although I didnt mind the flavour I was hoping for more of a bark. A friend suggested we make brisket bennies today so thats what we did. So good. I also made tallow and injected that into the flat.
