I was wondering that as well. Our two local Costco stores sell traeger year round. They were selling Louisiana as well but I don't remember if they still do. I'll let you know how well they work.
3lb went on at 9am, opened the lid for the first time and took the meat out at 6:15 (195 deg meat temp) 200 deg until the stall (this one stalled at 155 deg) then after 45-60 minutes cranked up to 275-300 degrees. Stall was a good 3 hours before it started climbing again to 195.
Came out as one of the best I have cooked Great bark, flavor and soooo tender, moist for sammiches or as is
Wife hated it.Too fatty.Next time I'll cook her a boneless skinless chicken breast and I'll overcook it.
