    Couple little hiccups but other than that it's been rock solid even in sub zero temps,and I have alot of cooks on it

    Yeah, I get the same graphs from my woodstove and any sudden drops are from opening the door and especially, reloading the firebox.

    That looks like a really nice controller! Not sure if I am ready to step into charcoal / wood split smoking yet though. I am sure it is great but not sure it is far enough better than a decent pellet smoker to be worth giving up the convenience of a pellet smoker for. That plus I do not have access to natural wood of any desirable types.

    One St. Louis, one back ribs. Smoked with cherry and pecan pellets for nearly 3 hours for the bark. The wrappend and cooked for 2 hours. The Butcher BBQ sauce and another 20 min. to set the sauce.
