I wanted to grill but the weather is sheet-ee and, besides, my kids love this version. Rack of lamb (post Easter mark down at Costco), cut into chops. Flour, egg, bread crumbs (with dried oregano and grated parm mixed in). I use the mallet to flatten out the meat. served with some pesto from last year’s summer basil. Gotta make room for this year.
I love lamb , the Mrs. wants no part of it. One of these days I really need to get my fix. Last time I had it was well over a year ago when it was a special at the restaurant when we went out to dinner. That fried idea sounds really good , I have done pork , chicken and beef that way so why wouldn't lamb just as good if not better. 8:45 am and now I am starving .
There is actually a retail lamb shortage right now. I sure you can find it but you'll be paying top dollar for fresh American lamb.
Oh ya? Well here (Ontario) last I checked leg of local lamb was $10/lb vs $7 typically. But that was around Easter. Otherwise it's more expensive than other meats in general. The New Zealand stuff is usually the cheapeast, but also frozen and not my favourite flavour. The stuff I used here was from Australia, which is what Costco carries, and it is really nice.
