When you "do" Pastrami, is that the pickling and everything from just a plain brisket? I've only done a few brisket's, actually it might be only one. It tasted good but my lack of everything from selecting to carving the meat, added to the cost that they get for brisket when you have a pork butt budget (cheap bastard).
This is a store bought corned beef that I soaked in water for 3 days. I do some of my own curing,but corned beef is much easier in this case.
