I like to keep the ovens open for all the other dishes. Grilled turkey is fairly easy and they always turn out well!
It's been a few years for me but I smoked them in the past. Dry brine for a couple days and then to the smoker. We had the gang over and I was treated like a rock star! Since the crowd outgrew our small house we no longer do Thanksgiving here. I did just pick up two 16 pound turkeys for the whopping price of 6 bucks. That's not an error , yes $6 Good time to get one prepped to get smoked. It's been a while.
We changed up the meal yesterday. Smoked 4 slabs of baby backs. Used Killer Hawgs AP rub on 2 slabs and Killer Hawgs BBQ Rub on the other 2. Made a glaze with peach preserves and a bbq sauce, brushed on right before they were done. Smoked with Almond pellets from Knotty Wood. Bbq rub AP rub, its got plenty of garlic in it
My Black Friday Turkey…. I’m going to try something a bit different… it’s a 13lb bird…180 F for 2 hours and then kick it up 275F for the remainder…

So I got the MEATER thermometer last year. After Wednesdays annual thermometer doubt moments … I googled MEATER… and learned to how to use it…… Well I actually ran the cook to a temperature… seemed to work out alright… not sure where I’ve failed before. But it worked…. Here’s the cute little graph it gave too. Pretty cool you can see every time I opened the door to spray apple juice… … it’s off by about an hour due to not starting the cook on the app right off the bat…
