The Pineapple was smoked for 1 hour at 150F. Then was added to a Mango Pineapple Jam with Ghost peppers added. Hopefully it’ll be good...
Taco Tuesday....I pulled the pork from the country style ribs cause I over cooked them by about 30 mins and they were fall off the bone..I pulled this by hand with gloves on...I don't recommend pulling this with a fork...since they went thru a bandsaw there is sharp shards of bone,and by hand you can feel them. Oiled the flat top with cooking oil mixed with Mongolian fire oil..got some mozz and some blend on there
i saved the drippings from the country style ribs cause i cooked them on a elevated rack and mixed it in the cold pork then hit the flat top....ill be posting a short review on the killer hogs rub shortly
