Made pork breakfast sausage with Alton Brown's recipe https://www.foodnetwork.com/recipes/alton-brown/breakfast-sausage-recipe-2103185 . We used pork from our local butcher, fresh sage and rosemary from the garden and home grown pepper flakes. It was delicious! We froze about 4#, too. Later today, I'll be working on venison sausages and burger.
Wish you were closer. I made a crockpot full of venison chili over night. We are just relaxing with the family and the dogs on a cloudy, cool, fall day. Company would be welcome. Maybe another time.

Looks great! I just made a bunch also but used a commercial mix. It is OK but next time I will use a recipe such as the one you used!
