Possibly a grilling no-no but had the space and the smoke was free so threw on the salmon. My kid has been asking for it and I had wanted to try and make it. Pork was tonight's dinner, and many future nights, always a hit. The salmon hit 180F at first probe, woops. Didn't seem dry, will make some sandwiches and probably dress up some rabbit food for nice lunches this week.

Pork butt Nothing special, I'm trying the "pan of water" thing, starting out in a foil pan (above the water pan) for good bark. Then sometime foil wrapping to finish.
First time trying it this way smoked for 3hrs at 275-300 then bathed in Lipton beefy onion and beef stock foiled for a couple more hours, added potatoes and carrots for 30-40 mins before pulling for rest. Definitely better than the plain old crock pot method.
