Here's the recipe if anyone wants to try it. Easily one of my favorite soups to make. Ya can't have just one bowl. Recipe is for the instapot pressure cooker. I like to add about 3-4 chopped carrots as well .
The one thing my wife didn’t want for Christmas was an instapot. I’m interested. My mother used a pressure cooker all the time. Anyway, she got one for Christmas and it’s been the joke in the house. I can see it now sitting in its box at the bottom of the stairs across the house. As I sit across from my wife. I presented this post as Exhibit A! M2theB my FIL had one and raved about it. I had a few meals that he cooked in his and I was hooked. He got us one for Christmas last year. I use it all the time! I've cooked ribs, sausage peppers and onions, stews , soups, pulled pork and chicken ,etc. Some meals turn out better than others but where i think it really shines is soups. This soup for instance, tastes like it's been cooked all day but it actually took all of 45 mins.
My dad taught me a truck years ago for most soups- when cooking throw whole stalks of celery in. When done cooking, remove the stalks and toss them out. It really adds a nice flavor.
