Just did it the other day, 1lb ground beef drained. Hunts fire roasted chunk tomato sauce with garlic, one can of bushes mild withe beans and on can mild red beans in sauce, large tablespoon of brown sugar (if you like it sweet).
Look up “over the top” chili recipes. Basically make a meatloaf and smoke it over the vat of whatever else you like in your chili. Delicious! Side note: I make my own chili sauce by boiling dried chiles in beef broth, and then blending until a smooth puree.
My wife makes the chili but we keep adjusting the seasonings till we’re both happy. No real recipe but we always use venison which has bacon added when ground.
Venison chili is the best! Wife used to make it a lot but sadly she doesn’t remember like she used to and can’t follow a recipe.
My recipe is pretty simple, but easy enough and tastes good. I make venison chili. I brown it in some beef tallow or bacon grease. You want to make sure you cook it "hard" and get a nice brown (not gray) going. In a crock pot, add 1 diced onion, 1 diced green pepper, a couple cloves of minced garlic, browned meat, 1 can of condensed tomato soup, 1 can of undrainded diced tomatoes, 1 can of undrained kidney beans, 1 quart of tomato juice, 3 Tbs sugar, 3 Tbs chili powder, cayenne/habanero/whatever hot pepper to taste . Let it cook for 4-6 hours or longer, salt to taste.
I can follow a rec ipe, but there are some really bad ones out there. Especially online. Some people put anything up for ad money, sadly. I wish my father's mother had written a lot of stuff down as she had a lot of english recipes that were, well, english.
2lbs 90/10. Half an onion, diced. Brown the meat with the onions. Can/jug of tomato juice, add to desired consistency. 1 can kidney beans. Chili powder, salt pepper to taste. Fresh peppers and or sauces for some kick. I make hamburger patties out of the beef before browing so that the meat will stay more in chunks when finished. Serve with cheddar, s cream and saltines.
I have made this countless times and everyone that has tried it always enjoys it. MikeInMa, this is the same recipe I used for the chili I brought over that one time. Crock Pot Black Bear Chili 1 to 2 pounds ground bear meat 1 can black beans (rinsed and drained) (15.5 oz can) 1 can red kidney beans (rinsed and drained) (15.5 oz can) 5 cloves fresh garlic, minced 1 medium onion, diced (red, white, or yellow) 1/4 cup fresh chives, chopped 1 can crushed tomatoes (28 oz can) 1 can diced tomatoes (14.5 oz can) 1 can diced green chiles (4 oz can) 3 cups beef broth (low sodium) 1/4 cup chili powder 2 tbsp. dried oregano 2 tbsp. cumin 1 1/2 tbsp. salt 1/2 tbsp. black pepper Olive oil (as needed) Serve with sour cream and shredded cheese (as optional garnish) and some jalapeno cornbread Brown bear meat in olive oil on the stove and add to crock pot afterwards Sauté onions in olive oil until tender, then add garlic and cook until soft - add to crock pot afterwards Rinse and drain both cans of beans and add to crock pot Add tomatoes, chilies, broth, chives and all seasonings to crock pot Cook on low for seven to eight hours Garnish and enjoy!
Man, sounds good! Too bad the local market is fresh outta bear burger! I've had bear once...meatballs IIRC.
I've made the same recipe several times using ground venison or elk in place of the bear meat. I'm sure you could substitute ground beef or bison as well.
That sounds really good! Wondered if I could use Venison and that question was answered, thanks! What size cans of beans are you using? They come in a couple of sizes with the small ones the size of a soup can.
I tried a bunch of different recipes over the years and finally started tweaking a recipe my mother had made for chili with ground beef. Added some things, deleted some things, and finally came up with this recipe. Just made a fresh batch last week (often have the chili over rice or egg noodles). I updated the recipe with the can sizes I use. The bean and diced tomato cans are the soup-can sized ones and the crushed tomatoes are the larger can.
