I had two small racks of ribs to cook. I made a up a rub and fired the oven up. White cedar to start it and on to small sugar maple and oak splits. The wind was changing direction so I bricked up the left side for a better draft. This firing was a little slower then when I fire it for pizza. After an hour, the coals were raked out on the firebrick to heat the oven floor. The ribs went in a cast iron pan with a little water in the bottom of it. They were covered in foil for 1 1/2 hours. After the time was up, I uncovered them and basted them with bbq sauce. I made up some cornbread mix that went into another cast iron pan and cooked for about 45 minutes. 2 small crocks of beans went in. One maple bacon, the other bbq. Everything cooked for just over an hour more. Everything was very tasty, the ribs were a lititle firmer than I would have liked, but still good. Maybe I will foil wrap them in a flat pan next time and then cook in a pan at the few minutes.

Cooking ribs in a oven that's hot enough to cook cornbread is gonna be tough to get right. You might try them in a dutch oven and go a little longer on time.
Right. Like braising them to cook and finish off with bbq sauce outside of it. The cornbread normally takes just over 20 minutes to cook in an oven at 400. This took almost an hour, and could have cooked a bit longer, so the oven temp was a bit lower. I tried for the low and slow.
Looks delicious as always. Switching up the menu along with the pics of the cooking and the finished product causes my stomach to start eating my liver.
thankfully I didn't see this last night before bedtime. thankfully I had breakfast before reading the post. Was I talking about not seeing any WFO pics? Everything does look so good.
With the drought in our region, I have not run the oven all summer. We have had a little rain recently to wet the yard down. Time to catch up. We do need a lot more rain.
