Stuffed portabellos

    I'm cooking something real simple for dinner tonight. Grilled portabellos and crabmeat stuffing from the local fish market.

    Prep is real easy. Just scrape out the gills and stuff.

    Crab mets stuffing that I buy at the fish market.

    Try it. They are super simple to make if you have a fish market nearby that has the stuffing ready made. Put them in a basket and cook face down till the stuffing gets lightly toasted. Not too much or the stuffing will fall out. Then flip and cook the portobellos. They shrink, another reason why you need to toast the stuffing first. Otherwise when you flip them the mushroom will slide around in your basket and the stuffing could fall out.

    That looks awesome Paul B! I wish I lived closer to one of the coasts. Fresh seafood around here is damm hard to come by.
