Spare Ribs Pizza

    What do you do with spare ribs trimmings? After making St.Louis cut from a rack off spare's, I made Italian sausage! Then, I made a pizza out of it!. The skirt and brisket trimmings seemed a bit dry, but of course,I had some home smoked bacon grease to add in. Sausage, pepperoni, bacon pizza. Some day, I'll start making my own cheese. I do make the sauce out of tomato sauce and spices.

    Beef and cheddar? That sounds delicious. I often make a pulled pork pizza with left over bbq. Sweet baby rays, and mozzarella.

    It's not spare ribs, with bones. It's the spare rib trimmings, made into sausage. A bit lean for sausage, but it works. Oh yea, I forgot to mention, the crust is home fermented sourdough.

    I've made mozzarella. It is actually pretty simple. It's been a while, but I'll work on perfecting it one of these days. I need to figure out how to dry it out more, I think. When I put it on a pie, it burned more than it melted. It was pretty awesome just to eat a chunk, though.

    Best sauce I've ever had, period, anywhere, was made from fresh romas from my garden.

    A few short cycles in the microwave and kneading in between gets it pretty dry.

    That's what I did, just probably not enough. I haven't messed with it in a few years.

    After life settles down, I'll work on my pizza skills.
