I agree with what he is saying about the direction of the sharpening having an effect on the quality of the end result. If your asking about the reversing of the motor, a single phase induction motor doesn't care which direction it runs. Once it's moving the starter windings disconnect and the motor will continue in whatever direction it is turning. The starter windings only determine direction from a dead stop.
