Campinspecter is a house husband while I am still working. We have our main meal of the day at lunch and he cooks it as I only have an hour for lunch. After 42 years, he is learning to cook again and he is learning fast. Lunch today was meatloaf, roasted potatoes, rainbow chard and for desert - fruit salad. I know, I know - no pics, it didn't happen. Well, here you go. The meatloaf was awesome. Enough for a couple of meals so I froze some it of it. If anyone wants the recipe, I can post it. The roasted potatoes turned out really well. Olive oil and garlic powder. Rainbow Chard was added as a veggie and my plate is full. Dessert is fruit salad which Campinspecter is getting really good at. Before the topping. After the topping!! My wonderful house husband!!!!! And Finally how could we forget the clean up crew!
How do you go back to work after a meal like that? Are those apples on the meat loaf? I do the same thing with the plates, the first time my Grandmother-in-law saw that she freaked. The next time I let the dogs have a bite from my mouth
That calls for an afternoon nap! Meatloaf is just good stuff.... did you do the ketchup/ honey glaze?
I do potatoes just like that. Never seen apples(?) on top of meatloaf, but it sounds gooder. Just woke up a few minutes ago, and now I want a meatloaf sammich. Dang it, you two. The coffee will have to do for a bit.
yes, apples on top of the meatloaf and ketchup and brown sugar glaze on top as well. there are apples in the meatloaf too. It was quite moist. I will post the recipe later. I did mention that I could roll down the stairs and have a nap but instead walked to work and tried not to go to sleep at my desk. Fortunately school is really busy right now.
The GF told me before her mother came to not put the plates down, apparently she refuses to eat at a friend of hers after witnessing dogs cleaning plates there. She ate off my plates for a week
With the abundant of really hot water for the dishwasher, I really don't have a problem with the dogs licking the plates clean. Of course, they are so clean, you have to remember to put them in the dishwasher before they go in the cupboard!!
That is a really good meal. For sure one we would have here. I never grow tired of meatloaf or the oven backed potatoes. Greens are always good, esp. with an oil vinegar topping. I'm trying to get our meat from the local butcher. So many recalls on meat from the big places. For all the faults one might have with the small farms up here, at least we don't get sick eating their veggies and meats.

Well, lunch today was even better. I have always found that meatloaf is better the next time you heat and serve it. The recipe that Campinspecter used is as follows only he used 3 lbs of ground beef so he doubled everything. 1 1/2 lb ground beef 1 c. soft bread crumbs 2 eggs 1 tsp. Worcestershire sauce - Campinspecter read 1 Tablespoon so I think this is why they turned out better. 1 medium onion minced or finely chopped 1/2 apple - diced finely 1 1/2 tsp salt pepper to taste He also added yellow peppers and Bok Choy diced finely. 1 unpeeled apple, cored and cut in eight pieces 3 tablespoon ketchup 2 tablespoon brown sugar. Mix all but the last three ingredients. Put in pan. Insert apple wedges on top. Dribble ketchup over then sprinkle brown sugar. Bake 350 F for one hour.
