I was going to wait for fresh crab's this spring. But I found a special and snatched up a LB of crab meat. (Butcher I used a ham hock in my crab stock, gave it a nice rich flavor.) First step ... 2nd step, eat the bacon 3rd step ... cook more bacon Now off to prep the mirepoix...
Had a quick timeout to feed my little Pileci .. Mirepoix ready (with garlic too!!) and cooked down ... Next up the crab stock, with turkey stock and a jar of canned maters. I found one of the jar's that we had put bay leaves in before we processed. Haven't even broke the crab out of the fridge and the house smells DIVINE! Will be adding the rest of the veggies back to the party here soon, then crab meat and time to devour...
BEST BACON IN THE WORLD : Schmidts Sausage (I get it cut off the slab and hand slice my own, REAL thick.)
I concur I have a bunch of family in Maryland, all my Uncles are fisherman, I have fond memories of goin crabbin with them as a kid, nothin much better than a Maryland Blue crab. If you post a picture of a soft crab sandwich with the legs and stuff falling out the side...I just might die.
I love crab. We just had crab cakes the other day, we used canned claw crabmeat, because we are nowhere near saltwater. Dave, you talking about soft shell crab has me jonesing for a spider roll at the sushi joint. A spider roll is a fried softshell crab sushi roll. Yum.... The wife is a nor cal/ Portland girl, raised on dungeness. She makes a wicked crab morel risotto. And we just had king crab for new years at the house. Did I mention I love crab?
I remember my great grandma's crab soup. She would mostly just break the crabs in half and throw them in like that. She picked some to mix in and added beef chunks too. Man it was good.
We don't eat crab anymore but on a trip to the Central Coast of BC in 2008 in our sailboat, Campinspecter put down the crab trap in the most unlikely spot and when he went to pull it up, it was real heavy. We had been catching a lot of big sunstars (multi-leg starfish) up until then so we thought we had a lot of them. Instead is a pic of the eight biggest Dungeness Crabs of the many that were in the trap. Hard to get a good idea of size but they were well over the legal limit.
