you have a nice set up there. Neat. I don't think there is much we can do about the wind. It always seems to "win" . The only cover I can think of is a shed, even that has to held down. maybe you can plant two wind rows of trees and have your covered piles in between them.

Chicken was great ! We made fresh broccoli and collaflower saled from the garden to go with and ate like like we were on top of the world. !
And here we go with the covered or not covered stacks debate once again.... Butcher says, I'm going to cover my stacks. Mother Nature says Oh no you're not! Kinda maybe probably should've could've might have been able to use that old barn, no? Or was it is just too bad condition?
I get way more sadder seeing an old barn come down than a grand ol' tree any day. Trees replant themselves all the time. We stopped growing barns in this country a century ago, and we sure ain't planting new ones.
