Where are you gentlemen and ladies finding the hottest temperature for cooking on your Ideal Steel stoves? According to my IR gun, the space just to side of the stove pipe seemed to be the hottest. Second, was the center burner with the center removed, then came the side burners. This might change if I had a full box of charred wood and going with a cat only burn.

My ir gun tells the same story as yours. Either side of the flue exit is hottest. Then the center burner only if the plate is removed then side burners

And that is how the stove was designed to work!
