Starting a Cold Smoker this evening. Separate fire box/ smoke chamber, Electric heating Element. Will be able to make different size smoke chambers so that I am not always burning on high. Smaller firebox needs less electricity/smoke to run correctly. Pics as I progress.

I picked up a Bradley a couple years back, for under 300. You can use it as a cold smoker if you turn the heating element off. I've done my own hotdogs, sausages, and smoked cheddar on it.

The only thing I don't like, is that you have to buy the wood pucks for it, or figure out a way to make them yourself. But it automatically feeds them, which is really nice.

You plan to run it on wood chips, or chunks, or something?

Yes, Wood Chips in steel pan on the heating element makes the smoke. Totally controllable and I'm betting I get the thing put together pretty cheap.
