Bone Broth on the Summit

    Trying to make some beef bone broth on the Summit tonight. It is the first time for us making bone broth or soup stock. We'll see how it turns out.

    Yeah, two devils. Look out.
    About two hours on the stove top, it has a good simmer going now and some scum on top.

    I'm a big fan of stock from bird carcasses. I add a few carrots, celery and onion to the pot. It makes the best base for soups, stews and pot pies.

    I bet it smells real good in there.

    We have several chicken backs and necks to do next. I used some onions, garlic, and peppercorns in this batch.:cheers:

    1419211784045.jpg 1419211842572.jpg So, after a little pause to clean up a mess, ie....tried to fill it too full and after the heat got turned up a little it boiled over. Hot grease and water all over the top and down the front, not fun.
    We strained the solids out and let it cool in the basement for a couple of days, then lifted the fat off of the top. I am heating it back up now to can it.
