As soon as you have enough room to get the tip of wedge in is what I do and then palm it. Hope this helps
I have burned peach wood no problems. It burns good and throws heat so yeah burn it burn it all, or save it for smoking.

I agree with others on Cottonwood , could be Black Walnut but it likes to grow crooked by looking at the ones we have
