    if its a little guy dont sear very long,the heat will go right thru it,and i know you want it raw....maybe you could run a flashlight over it a couple times?:salute:

    Makes sense...its about 2lb so will keep the sear on the shorter side.

    Indirect temp of about 350 deg?

    thatll work.....200° sometimes here....or 275°...or 225°...:rofl: :lol: just changes cook time,seems to finish the same especially if you sear,if you want bark without searing the higher temp would be better....if you want any sort of bark on it coarse ground rub is needed because of the small cook time....be different on all day cook,you can build bark but 2lb aint fixin for big bark

    Boiled dinner here too. Famdamily in town so they gotta have some bugs while they're here. I'm not a huge fan I can take em or leave em. I was not responsible for the corn, not sure WTH happened there! Potato salad, green salad with some crab salad.

    Ain’t no shrimp or mud bugs in Iowa maybe some crayfish. If they dare you to suck the head decline... unless you enjoy time on on the porcelain throne

    Temp got away from me to almost 400 deg . :eek:....:doh:
    Almost ready to sear IT temp 120 earlier than I anticipated due to higher temp

    Came out perfect to my liking and was fantastic :)
    Not much bark as I wasnt sure how the high cook temp may have effected the cook so the sear was real quick and I did add a very light brushing of Sweet Baby Rays before the sear.

    Yeah, I like it rarer than my better half does. Just threw hers on the grill for half a minute and perfect for her too.

    Add some tater salad with cheddar and bacon for both of us :drool:-aint no vegemetarians round here
