    Greetings all! First, a little prayer for those who can't be with us today :(................. So, as said yesterday pork shoulders going/went on the grill. Gonna do a good 6hr smoke, were gonna eat later because my daughter had to work and won't be home untill about 6pm. This is a huge tourist area, most are enjoying themselves, others have to work. o_O Imagine that!... ;)

    P.S., this is the last year for old #5 smoker. I cleaned it out and I'm only gonna get a couple more cookings out of it, "hope it makes it through the summer", Bottom is just about ready to fall out. :( This old smoker doesn't owe me anything!!! Built in 2010 and made it this long. Most of my others have only made it 5 years or so. This was a "Thick old tank" probably from the 50's.

    Yesterday afternoon I broke out the Weber, added some Kingsford and lit it up.
    We were fixing country style ribs bone in. The recipe I had called for indirect heat. I had broken off a small dead branch off of a wild apple tree earlier in the day. When the charcoal was ready, I added a piece of the apple wood on top, put the grill on and added the meat. An hour or so later the ribs had reached their 160 degree level, so time to eat. I did not use any marinade and did not add any bbq sauce. Best country style ribs I have ever fixed. Just a bit of salt to bring out the flavor. All served with rice and Bush's Grillin Beans. Wife gave it a 10+++

    The pork belly slices came out great,never had much luck cooking them....I have good success cooking pork belly as a roast/chunk but these slices been kickin my azz.watched a bunch of vids and all the Asian peeps boil first.....it worked :loco: :crazy: 20190527_182527.jpg

    Beef, kinda pricy but really good. Works great sliced up into bite size pieces as an appetizer. But I made it my meal!!!
