I have that same style terra-cotta cooker that was handed down from a family member. Have never used it but your picture has me curious now. Might have to dig it out. And the shrimp look great but yeah, they are easy to overcook. Only need a couple minutes.
Cooked this on my Kamado Joe Sunday. Salt and brown sugar brine the night before. Smoked with apple wood.
I like it a lot. I was using gas before but this thing does a great job of maintaining low temps for a long period of time. Beside slow cooks I have cooked spatchcock chicken, grilled steaks and burgers. I also smoked one of the two turkeys that we had for Thanksgiving and it was a huge it. They picked it clean and the oven turkey still had plenty of meat on it when we were done.
