Well I am working on the first shift this week, so that means I get to cook my lovely wife dinner. For tonights dinner since its raining and dreary I thought nothing would be better then grilled cheese and soup.

Decided to get my "gourmet" on and make it lasagna grilled cheese. Its ricotta cheese with fresh chopped basil, cherry tomatoes, mozzarella cheese, I picked a rosemary bread and the soup is roasted red pepper and tomato!

Well my wife ended up being an hour late from work so i ended up eating it by myself and I did an excellent job.:D:p:D

Looks delicious! The ricotta cheese is unique for the toasted cheese.

That's a great idea. I love making different types of breads. Try making and baking a "No Knead" bread sometime as long as you've got a good heavy crock to bake it in (I use an old cast iron dutch oven), those make a grilled cheese to die for with the big open holes in the grain and crispy crust. The rosemary is a good idea too. I"ll have to try it sometime.
