I just probed it with a wood skewer...it went in like buttah it's now wrapped in a towel resting in a small cooler.
about 1 1/2 hour mark... Then I made a mop of pineapple juice, brown sugar, stick butter, some of the rub that I put in between the slices before putting on. Then about every 20-30 minutes took that juice and remopped it.... Before putting it on the smoker, I drizzle honey between the slice and a little sprinkle of my rub. Then honey on the outside with a light coating of rub...
