It’s past 2:30 in the morning, I realized I haven’t gotten an alert for this thread since last week and I forgot to check in. I’m lookin' at what’s cookin' and getting mighty hungry. Boston Butt whole chicken and a few sweet sausages. On at 9 am running at a steady 230-240. Hopefully I'll be able to eat tonight, going out of state for work the next 3 days.
That’s a good hunk of brisket in that pastrami. Plenty of marbleized fat in it. It’s going to be juicy and tender.
Here I have half heat deflector on the cool side with grate above it,hot side has the grate at a lower level no smokewood cause I'm using lump for some boneless Chinese pork today
Gettin the big dog fired up for a couple split chickens. Tomorrow I will make pressed Cuban style sandwiches on the kamado with some of todays bbq chicken
Chinese pork is on.....i got lucky and made just enough to cover half grate...rockin this @225°for awhile,then I'll crank it up and get some char on it
