Took some of the deer dogs from this year and wrapped them in bacon and onto the smoker! Turned out awesome topped with some homemade pepper mustard. Will be making more of these for sure.
I was watching a food show last night and it was all about hot dog joints! Lots of I've never heard of. The Varsity in Atlanta was a big place! My chin was dropping through most of that show, so many hot dogs I've never tried. UGH!
Had some figs that were stuffed with goat cheese and wrapped in bacon with a balsamic sauce! Dang they were good! Gary

I remember seeing that & taping that show a year or so back.On the Travel Channel I think it was,filmed in 2008.Couple of the Chicago joints I heard of,everything else was new to me though.
I had them made, looked into making them but you have to grind the meat down to the consistency of baby food and I only have a mini food processor so need to get better equipped before I make my own.
Ahh gotcha. I had some deer dogs made by a local butcher and they were great! Something i definately want to try making on my own but first i think i'll try making my own sausage.
You haven't had a hot dog till you've ate a few lbs of Jordan's red hot dogs. I think just available in Maine? Mmmmmmm!
If you get a good grinder for processing deer, making sausages is pretty easy. I make summer sausage and salami that's pretty smooth in consistency. You have to grind it, season it, then grind it again with the stuffer tube on anyway. Once more grind might get you close to hot dogs.
The Varsity is a great place to eat at. Just make sure to leave room to top it all off with a chocolate shake.... your tongue will slap your eyebrows making sure you got all of it!!!
I do have a good grinder and stuffer and make sausages and summer sausage. The hot dogs though you need to get down to a much finer grind from what I read. They recommended using a big food processor. And I got 100lbs of hot dogs made so that would have taken me forever with my mini food processor.
