I love to fry bacon and set it aside. Drain the grease but leave the last little bit that has the cracklins in the pan. Toss in shredded carrot and chopped onion to sauté. Once softened toss the sliced zucchini in with a dash of seasoned salt and cook to just past tender crisp. Crumble bacon over the mix and devour!

Wifey made some zucchini fries tonight. Cut to size dunk in egg wash then into bread crumbs. Bake till crisp. My favorite. She also make a grilled onion sauce to dip in. Yum!
I used to grow spaghetti squash. They keep real well, I think I still have one or two from last year. They don't taste like much of anything though but what you add to it.
We use a regular spaghetti sauce with it, so.....it tastes like spaghetti-just a little boring once you get past the sauce!
