my wife volunteer'd me to cook for a fundraiser for a charity she's involved with. They will be raising money through a concession stand at an outdoor concert. They wanted to sell pulled pork sandwiches and were estimating a couple a hundred people and maybe sell 100 sandwiches. So I fired up the ugly beast for the first time this year. Here's 2 of the 4 butts seasoned with "Memphis Dust" (it's a rub recipe I got online that I really like). As long as the smoker is fired up, I have to throw some meaty treats on for us.....and the neighbors So I decided to also do a brisket. Seasoned it liberally with salt and pepper. Now, I need to prep 3 racks of St. Louis cut ribs, a couple of small sections of beef ribs, a 5lb hunk of Bologna and some hot links! I'll keep you updated as that stuff gets ready to go on
The beef ribs are trimmed and seasoned and ready to go on. I seasoned them with Big Bad Beef Rub from the same website as the Memphis Dust.

Lol it was a good block party! Fund raiser went pretty good. I think the people up here still aren't sure about southern BBQ.
