    Now do you leave it a bit moist and chewy or does it get all dried out and tough?

    i get it out of the smoker when it is still slightly soft but when it cools it becomes chewy but not dried out.

    Smoked roast then let it sit in the crock pot put horseradish on it then smoked asiago. Toasted some slider buns to put it on. They were good!

    put my bird in the smoker at 5 gonna let it in there for a few hours then finish in the oven, after the bird comes out of the smoker I got more venison jerky to put in.
