Fall is coming.....we're blanching corn!

    Dad and I did our annual corn blanch this evening, ended up getting 12 dozen blanched, cut off the cobs and bagged. Ended up with almost 40 qt bags.....

    We'd put two dozen ears into the boil for 3 to 4 min, then put it in ice water for a few minutes, cut it off the cob...

    Didn't get any "during" or "after" pics because my dang phone died.......

    It's nice having local grown sweet corn at Thanksgiving, Christmas, Easter and several other times during the winter. Brings a taste of summer to dinner.....

    Did mine about 2 weeks ago, don't grow corn but usually can find it pretty reasonable. $3.00 a bakers dozen this year.

    Did my annual stuffed pepper duty tonight. You can actually see the corn at the top of the picture and off to the right my wife's contribution of zucchini bread.

    Corn was really late here this year. Didn't really get any til near the end of July.

    We froze a bushel of corn and you're right, it's great to have in the winter.

    Get yourself a bundt cake pan, stand that ear up in the middle and an electric carving knife.

    My parents have done this for years. It's the closest thing to fresh in the middle of winter.
    They used one like this to cut it off. Blade was adjustable if I remember right cause you could make it creamy or whole kernel.

    Sweet (pun intended).

    My wife used to blanch veggies but we stopped that about 5 years ago or more. No more blanching; saves time and we think the flavor is better. Our corn is now done. I cut the last of the stalks today and most of our corn stalks were 11' high or more! Lots of fodder out there now that will be tilled under. Lots of corn in the freezer too and plenty of it went into the bellies.

    I just husky it, clean and vacuum seal it. I find the vacuum sealer does a great job at preserving food.

    Looking Good Scotty... I got a side freezer full of corn... but if I don't eat them, I know my chickens will enjoy the treat during the winter time..

    So just husking them and vac sealing seems to keep em fresh enough? Hmmmm gonna go get me a few dozen ears of jersey sweet corn today.

    Any excuse to use the pit is a good one right scotty! :thumbs:

    We had our annual end of summer cookout a couple weeks ago with a few friends.
    We always boil up a kettle full of 6-7 dozen and freeze what's left.it was a good corn year here. Good size ears and deep kernels .

    Same here but with a little extra twist.
    15 cups corn
    1/2 cup sugar
    1 1/2 T salt
    5 cups ice water
    Mix all ingredients and put in bags or containers and freeze. No blanching required.
    Whole ears we just cut the silks and stems off and freeze in zip lock bags to boil on the wood stove the next winter.

    We've tried freezing whole ears but neither of us like them much. We just prefer freezing without the cobs.
