vinegar chicken on the keyhole pit

    Yes I seem to remember the pig got the 5 star treatment! Hot spa, nice shave and masage, plus pleanty of extra ventilation to kick start the treatment!

    Genius do you power wash your pigs to remove the hair after scalding, or do you scrape 'em?

    If we are going to present the pig we burn the hair off with one of those big propane blow torches that go on a 20lb tank and then power wash the hair off.

    If we are just cooking a pig for ourselves and for meat in the freezer then we don't bother taking the hair off and just power wash them to clean them up.



    We only do a few roasts a year now. We used to have what seemed to be one or two every week, but we've been getting out of it over the past two to three years.
    One local farmer who did them like us got in huge trouble with the health department for doing one a few years back and that really got us gun shy....

    No keyhole pit, but I did the oil & vinegar bath on some wings over a little pear wood base. Everyone devoured so I'm guessing they were approved?

    I broke my spray bottle, so halfway through it was back to the old brush.
